Summer is here...

When the guests come out to play. I really enjoy this time of year. The busier it is, the better I like it. Its been my experience that the busier people are, the less likely they are to get in trouble, idle hands are indeed the devil's playground. Alas my deparment has decided that sending 90% of my culinary staff to Workplace Safety classes during peak business is a priority. I ended up having to schedule them off shift since there were only three class times offered and if I sent them on the clock, I would have had to run a 15 man stationed buffet with 4 people each shift. Of course the increase in overtime payroll will come as a surprise, even though I asked for authorization first. Politicking should be kept to the politicians, at least they don't have anything constructive to do.


I'll throw in a production recipe next post..Asian Brown Sauce anyone?

On another note, I noticed the typos in my prior posts. I will fix them.

I have a nice idea.

For the fifty millionth time I've recently had Lamb with Mint. It's always with mint. Minted sauces, mint jelly, mint herb rubs, blah, blah, blah. How about some rosemary? Perhaps a little sage and garlic. My god what if somebody made a nice Robert Sauce for the lamb? Use you imaginations people, insist on a little creativity from time to time. Thank you.
